Summer healthy eating idea: chicken tender salad

As a busy Mum I’m always on the look out for healthy and convenient food ideas and we love eating salads. Waitoa asked me to show you my dinner I created for a Summer healthy eating idea, of a chicken tender salad using Waitoa Gluten Free, Free Range Chicken Tenders. These are New Zealand’s only free range gluten free frozen chicken convenience products, so they’re perfect if you or your children are gluten-free and super-easy and delicious, even if you’re not!

I was pleased to learn that Waitoa Free Range chickens have been farmed and audited against the high welfare SPCA Blue Tick standards. Further info can be found on the Blue Tick website here and they use best practice poultry farming techniques. I was also happy to read it’s a Tick approved healthier choice product, meaning no artificial colours, flavours or added preservatives.

The tenders come in Original pictured here and also a Lemon Pepper which is a bit zingier ($13.95 a box); I liked lemon pepper myself, but small children might be better with the original, as less spicy.

How I made the healthy chicken tender salad:

Cook the chicken tenders in the oven as per the instructions. Slice diagonally.

Cut up lettuce, avocado, capsicum, avocado, and any seasonal vegetables you prefer. Arrange on a plate and place chicken slices on top. Drizzle with sunflower seeds and a creamy dressing and enjoy!
